The gap was never about growing great food. America grows extraordinary food. The gap was always in the handoff — the distance between where something is harvested and where it's finally served.

Bill watched premium seafood arrive late. Thawed. Three middlemen removed from the dock. He watched restaurants pay top dollar for product that had quietly died somewhere between the source and the plate. Quality bled out in transit. Margins bled out in the cracks between brokers, freight companies, and warehouses that nobody owned end to end.

He decided to stop watching and do something about it. And the more he looked for the hardest possible version of the problem to solve, the more he kept landing on one product.

Why crawfish?

There is no hiding a broken cold chain behind a crawfish — it arrives alive and thriving, or it doesn't arrive at all. Most of the industry treats it as seasonal, regional, "hard to get." Bill saw a billion-dollar product hiding in plain sight, with national demand climbing every year as Cajun and Viet-Cajun food went mainstream.
